Blueberry-Orange Nut Bread
This recipe was made by Judy Harper at a quilting luncheon.
Dry Ingredients:
- 3 cups flour
- 3/4 cups sugar
- 1 TBSP baking powder
- 1 tsp salt
- 1/4 tsp baking soda
Wet Ingredients:
- 3 eggs
- 1/2 cup melted butter
- 1/2 cup milk
- 1 TBSP grated orange rind
- 2/3 cup orange juice
Final Ingredients:
- 1 cup blueberries
- 1/2 cup nuts
Mix the dry ingredients together. In a separate bowl, mix the wet ingredients. Then stir the wet mixture into the dry mixture. Fold in the berries and nuts. (I made this simply stirring with a spoon using no electric mixer).
Grease and flour 2 loaf pans (9x5x3). Divide mixture between the
two loaf pans. Bake at 350 degrees for 1 hour (or until done which means it's pulled away from the sides and/or the center of the loaf is done when checked with a wooden skewer.)
Let cool and eat. Or you can wrap them in clear plastic wrap and then tinfoil for freezing.
