Bean, Cheese and Tomato Quesadilla

Across South America vegetarians can feel swamped by meat eating carnivores munching their way through quantities of beef and chicken. However, there are plenty of dishes which give a tasty mix of beans, vegetables and peppers. Adding cheese in this recipe gives an extra dimension.

Ingredients

  1. 6 Tortillas
  2. 2 cups red kidney beans drained
  3. 3 tomatoes chopped
  4. 1 onion finely sliced
  5. 2 cups jack or cheddar grated
  6. 1/2 teaspoon chili powder
  7. 1/2 teaspoon ground cumin
  8. oil
  9. salt and pepper

Heat Oven to 375
1. Heat oil and cook onion for 5 minutes. Add tomatoes, bell pepper, chili powder, cumin and salt and pepper. Continue to cook for 5 more minutes, stirring frequently.
2. Add beans and heat through. Partially mash with fork.
3. Spoon mixture on each Tortilla and roll up. Place remaining mixture around tortillas in lightly greased baking dish.
4. Scatter cheese on top and bake for 10-15 minutes until cheese has melted.
